We start with our center-cut beef tenderloin and sear in a crust of salt, pepper and garlic. We then coat it in coarse mustard and wrap the loin in mushroom duxelles, prosciutto and a savory crepe before applying puff pastry. All hand made from scratch. Sold whole only; priced on the finished weight, about 4½ lb, and serves 8–10. Comes with cooking instructions.
